AEROPHOS®XA monocalcium phosphate
Calcium phosphate monobasic, anhydrous of formula Ca(H2PO4)2
Has a very fast dough rate of reaction and is used in quick-cook applications where aeration in the initial mix is important. Often used in conjunction with slower-acting aerators to give an optimum leavening agent. Aerophos XA is anhydrous and therefore has a higher activity than the monohydrate form of monocalcium phosphate.
